Instructions
- Preheat your oven to 350°F (175°C). Prepare mini loaf pans by greasing them and lining with parchment paper.
- In a medium bowl, whisk together the egg, granulated sugar, brown sugar, pumpkin, canola oil, and vanilla until smooth.
- Sift the flour, baking powder, baking soda, pumpkin pie spice, and salt over the wet mixture. Stir until just combined; avoid overmixing.
- Pour batter into prepared pans and sprinkle cinnamon sugar on top. Gently swirl it with a toothpick.
- Bake for 28–30 minutes for mini loaves or until a toothpick inserted comes out clean. Cool slightly before removing from pans.
