Ingredients

  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup pure canned pumpkin
  • 1/4 cup canola oil
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • Cinnamon sugar topping (2 to 3 tablespoons)

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare mini loaf pans by greasing them and lining with parchment paper.
  2. In a medium bowl, whisk together the egg, granulated sugar, brown sugar, pumpkin, canola oil, and vanilla until smooth.
  3. Sift the flour, baking powder, baking soda, pumpkin pie spice, and salt over the wet mixture. Stir until just combined; avoid overmixing.
  4. Pour batter into prepared pans and sprinkle cinnamon sugar on top. Gently swirl it with a toothpick.
  5. Bake for 28–30 minutes for mini loaves or until a toothpick inserted comes out clean. Cool slightly before removing from pans.
