Ingredients
- 3 large eggs
- 55 g light brown sugar
- 65 g granulated sugar
- 1 tsp vanilla extract
- 65 g plain flour
- 15 g cocoa powder
- 75 g dark chocolate (melted)
- 2¼ tsp vegan gelatin
- 45 ml lemon juice
- 400 g fresh raspberries
- 100 g granulated sugar (for mousse)
- 480 ml cold double cream
Instructions
- Preheat oven to 180°C (350°F). Grease and line a 9-inch baking pan.
- Whisk eggs, light brown sugar, granulated sugar, and vanilla until fluffy. Sift in flour, cocoa powder, baking powder, espresso powder, and salt; fold gently. Stir in melted chocolate.
- Pour batter into prepared pan and bake for about 20 minutes or until a toothpick comes out clean.
- For mousse, mix vegan gelatin with lemon juice; let bloom for 5 minutes. Blend raspberries with sugar until smooth; strain if desired. Heat gelatin mixture until dissolved; combine with raspberry puree.
- Whip cold cream to soft peaks; gently fold in raspberry mixture.
- Once the sponge cools completely, pour raspberry mousse over it and chill for at least 4 hours until set.
