  • 1 avocado
  • 1 cup cooked or canned chickpeas (rinsed)
  • 1 cucumber
  • 1 cup cherry or grape tomatoes
  • 1 cup mixed greens (kale, romaine, or arugula)
  • Salt and pepper to taste
  • Pinch of paprika for garnish

Instructions

  1. Boil the eggs: In a pot, bring water to a boil and gently add eggs. Boil for 9-10 minutes. Transfer to ice bath before peeling.
  2. Prepare veggies: Chop the cucumber into bite-sized pieces. Slice the avocado and halve the tomatoes.
