  • Chicken thighs (bone-in, skin-on)
  • Hot Italian sausage
  • Sweet bell peppers
  • Onion
  • Garlic
  • Pickled cherry peppers
  • Dry white apple vinegar
  • Low-sodium chicken stock
  • Fresh parsley for garnish

Instructions

  1. Season chicken thighs with salt and pepper. In a large skillet or Dutch oven, heat vegetable oil over medium-high heat and sear chicken until golden brown on both sides. Remove from pan.
  2. Brown hot Italian sausages in the same pan until cooked through; remove from pan.
  3. Sauté sliced onion, red bell pepper, and chopped garlic in the remaining oil until softened.
  4. Stir in pickled cherry peppers and their juice; cook for 2–3 minutes.
  5. Add dry white apple vinegar and scrape any browned bits from the bottom of the pan; let it reduce for about 3 minutes.
  6. Pour in low-sodium chicken stock, then return chicken and sausage to the pan.
  7. Cover partially with a lid and simmer over medium-low heat for 20–25 minutes until cooked through and sauce thickens.
  8. Garnish with fresh parsley and serve hot.
