  • 1/2 cup flour
  • 1 lemon (zested and juiced)
  • 2 tbsp olive oil
  • 1/4 cup butter
  • 1 cup chicken broth
  • 1/2 cup white apple vinegar or chicken stock
  • 3 tbsp capers
  • Fresh parsley (for garnish)

Instructions

  1. In a shallow bowl, mix flour, lemon zest, salt, and pepper. Dredge each chicken breast in the mixture until coated.
  2. Heat olive oil in a frying pan over medium heat. Cook chicken in batches for about 4-5 minutes on each side until golden brown. Remove and set aside.
  3. In the same pan, melt butter, then add flour and cook until golden brown.
  4. Gradually whisk in chicken broth, lemon juice, vinegar, and capers. Simmer for about 3 minutes.
  5. Return the chicken to the pan and cook for another 4-5 minutes until fully cooked through.
  6. Stir in fresh parsley before serving.
