  • 1 ½ lbs boneless, skinless chicken breasts (sliced)
  • 1 medium red bell pepper (sliced)
  • 1 medium yellow bell pepper (sliced)
  • 1 medium green bell pepper (sliced)
  • 1 medium yellow onion (sliced)
  • ½ tsp salt
  • 1 tsp black pepper
  • 1 ½ tbsp chili powder
  • 3 tsp cumin
  • 1 tsp brown sugar
  • 3 cloves garlic (minced)
  • 5 cups milk
  • 4 cups farfalle pasta
  • 1 cup cheddar cheese

Instructions

  1. In a large skillet, melt butter over medium-high heat and cook sliced chicken for about 5–6 minutes until golden brown. Remove and set aside.
  2. Sauté sliced bell peppers and onions in the same skillet until soft, approximately 5–6 minutes.
  3. Return the chicken to the skillet and mix in salt, black pepper, chili powder, cumin, brown sugar, and minced garlic; stir well.
  4. Add milk and farfalle pasta; bring to a boil then reduce heat to medium and simmer for about 20 minutes until pasta is tender.
  5. Stir in cheddar cheese until melted and creamy.
  6. Serve hot, garnished with parsley if desired.
