  • 2 boneless skinless chicken breasts
  • 1 avocado, sliced
  • 4 slices of cheese (Swiss, cheddar, or provolone)
  • 4 slices of bread (sourdough or ciabatta)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • Olive oil (for cooking)
  • Optional: Red onion slices, tomato slices, fresh parsley for garnish

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a non-stick skillet over medium-high heat and cook chicken for 6–7 minutes per side until no longer pink. Remove from skillet, let rest briefly, then slice.
  2. Slice avocado and gather your chosen cheese.
  3. Spread mayonnaise on one side of each bread slice; add Dijon mustard on top.
  4. Assemble sandwiches with sliced chicken, avocado, cheese, red onion, and tomato on the spread side of two slices. Top with remaining bread slices.
  5. Grill assembled sandwiches in the skillet over medium heat with butter or olive oil for about 3–4 minutes per side until golden brown and cheese has melted.
  6. Let cool slightly before slicing in half and serving garnished with parsley if desired.
