Ingredients
- 2 Tbsp avocado oil
- 1 cup diced boneless skinless chicken breasts
- 1/2 cup diced yellow onion
- 2 cloves garlic (minced)
- 1 tsp minced fresh ginger
- 1 cup fresh pineapple chunks
- 3 cups cooked jasmine rice
- 2 Tbsp reduced sodium soy sauce
- 2 green onions (diced)
Instructions
- Gather and chop all ingredients.
- In a wok or large skillet, heat 1 tablespoon of avocado oil over medium-high heat. Add chicken seasoned with salt and pepper; stir-fry for about 5-7 minutes until cooked through. Remove from the pan.
- Add another tablespoon of avocado oil to the same wok. Sauté onion, garlic, and ginger for about 2-3 minutes until fragrant.
- Return cooked chicken to the pan along with pineapple chunks, peas, and carrots; stir well for an additional 2-3 minutes.
- Stir in cooked jasmine rice, soy sauce, and toasted sesame oil; mix thoroughly until heated through (around 5 minutes).
- Garnish with diced green onions before serving.
