  • 2 cups shredded chicken (rotisserie recommended)
  • 2 cups alfredo sauce (homemade or store-bought)
  • 1 1/4 cup shredded mozzarella cheese
  • 1/4 cup shaved parmesan cheese
  • 1 tsp dried parsley (or fresh)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a baking dish with cooking spray.
  2. Slice zucchini lengthwise into ⅛-inch thick slices using a mandolin slicer or chef’s knife.
  3. Place shredded chicken and about 1 tablespoon of alfredo sauce on each zucchini slice, then roll them up tightly and place seam-side down in the baking dish.
  4. Pour any remaining alfredo sauce over the top and sprinkle generously with mozzarella cheese.
  5. Bake in the preheated oven for approximately 25 minutes until bubbly and golden.
