Description

Chermoula (North African Cilantro Parsley Sauce) is a vibrant, herbaceous sauce that brings a burst of flavor to any meal. With its aromatic blend of fresh herbs, garlic, and spices, this versatile sauce can elevate grilled meats, roasted vegetables, or be enjoyed as a zesty dip.


Ingredients

  • ¾ cup Fresh flat leaf parsley (Leaves and stems)
  • ¾ cup Fresh cilantro (Leaves and stems)
  • 23 Garlic cloves
  • 23 tbsp Extra-virgin olive oil
  • 1 Lemon zest (From 1 lemon)
  • 2 tbsp Lemon juice (From 1 lemon)
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • ½ tsp Smoked paprika
  • ½ tsp Red pepper flakes (Optional, use more or less)
  • Kosher salt and black pepper to taste

Instructions

  1. In a small food processor, combine the parsley, cilantro, garlic, olive oil, lemon zest and juice, cumin, coriander, smoked paprika, red pepper flakes (if using), salt, and pepper.
  2. Process until you achieve a chunky consistency similar to chimichurri. Taste and adjust seasoning as needed.
  3. Serve at room temperature as a condiment or marinade.
