Ingredients
- 2 pounds fresh spinach, washed and trimmed
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 large eggs, lightly beaten
- Salt and pepper, to taste
- ¼ teaspoon red pepper flakes (optional)
- ¼ cup breadcrumbs
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a large skillet, heat olive oil over medium heat. Sauté chopped onion until soft, then add garlic and cook until fragrant.
- Gradually add spinach in batches until wilted. Drain excess liquid and let cool.
- In a mixing bowl, combine ricotta, mozzarella, Parmesan, eggs, Italian seasoning, salt, pepper, and optional red pepper flakes.
- Fold the cooled spinach into the cheese mixture and transfer it to the prepared baking dish. Top with breadcrumbs if desired.
- Bake for 25–30 minutes until golden brown and bubbly.
