  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt & pepper to taste
  • 1/4 cup tomato sauce (or salsa)
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 6 large flour tortillas

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned. Drain excess fat if needed.
  2. Stir in chopped onion and cook for about 3 minutes. Add minced garlic and sauté for an additional minute. Mix in chili powder, cumin, paprika, salt, pepper, and tomato sauce; simmer for 3–4 minutes before removing from heat.
  3. Lay out tortillas and sprinkle cheddar and Monterey Jack cheeses on one half of each tortilla. Spoon the beef mixture over the cheese and top with more cheese before folding.
  4. In a clean skillet over medium heat, lightly butter or oil the pan. Cook each quesadilla for about 2–3 minutes per side until golden brown and crispy.
