  • 1 cup shredded carrots
  • 8 oz cream cheese (for frosting)
  • 1/2 cup butter (for frosting)
  • 1 cup powdered sugar (for frosting)
  • 3/4 tsp ground cinnamon (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your loaf pans.
  2. In a mixing bowl, combine flour, baking soda, salt, cinnamon, nutmeg, ginger, and allspice.
  3. In another bowl, cream together softened butter and sugars until fluffy. Add eggs and mix well.
  4. Incorporate mashed bananas and vanilla into the creamed mixture.
