Ingredients

Scale
  • 1/2 cup popcorn kernels (or 10 cups plain popped popcorn)
  • 1/2 cup unsalted butter
  • 1 cup light brown sugar
  • 1/4 cup light corn syrup
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon pure vanilla extract
  • 1 cup dried apple rings, chopped
  • 3/4 cup candy-coated chocolate pieces
  • Optional: 1/2 cup salted peanuts

Instructions

  1. Preheat your oven to 250°F. Line a large baking sheet with parchment paper.
  2. Pop the popcorn using your preferred method and place it in a large mixing bowl, discarding any unpopped kernels.
  3. In a medium saucepan over medium heat, melt the unsalted butter. Stir in brown sugar, corn syrup, and salt until boiling for about 4–5 minutes without stirring.
  4. Remove from heat and carefully stir in baking soda and vanilla extract.
  5. Pour the caramel sauce over the popcorn and gently toss until evenly coated.
  6. Spread the mixture onto the prepared baking sheet and bake for approximately 40 minutes, stirring every 10–15 minutes.
  7. Let cool for about 10 minutes before breaking apart any clumps; fold in dried apples, candy pieces, and optional peanuts.
