  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 1 jalapeño, seeded and minced (optional)
  • 1 lime, juiced
  • Salt and pepper to taste
  • 1/4 cup mayonnaise
  • 1 tablespoon chipotle pepper in adobo sauce
  • 1 clove garlic, minced
  • 1/2 teaspoon lime juice
  • 1 cup cooked rice
  • 1/4 cup chopped cilantro
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Grill the protein: Season chicken or steak with chili powder, cumin, salt, and pepper. Grill on medium-high heat for 2-3 minutes per side until cooked through.
  2. Make pico de gallo: In a bowl, combine diced tomatoes, red onion, jalapeño (optional), cilantro, lime juice, salt, and pepper. Mix well.
  3. Prepare chipotle aioli: Whisk together mayonnaise, chipotle pepper in adobo sauce, minced garlic, lime juice, salt, and pepper until smooth.
  4. Assemble bowls: Divide cooked rice into bowls; top with grilled protein, pico de gallo, chopped cilantro, and drizzle with chipotle aioli.
