  • 1011 strips cooked turkey bacon
  • 2 heads broccoli (about 1 and 1/2 pounds or 56 cups)
  • 1 cup dried cranberries
  • 1/3 cup roasted and salted sunflower seeds
  • 1 cup shredded cheddar cheese
  • 1/3 cup chopped red onion
  • Dressing: Miracle Whip or mayonnaise, lemon zest, lemon juice, apple cider vinegar, sugar, kosher salt, black pepper, dry mustard, cayenne pepper

Instructions

  1. Cook the turkey bacon until crispy (baking is recommended). Chop into bite-sized pieces and set aside.
  2. In a large bowl, whisk together dressing ingredients: Miracle Whip or mayonnaise, lemon zest, lemon juice, apple cider vinegar, sugar, salt, black pepper, dry mustard, and cayenne pepper.
  3. Chop broccoli into small florets and add to the dressing along with dried cranberries, sunflower seeds, cheddar cheese, red onion, and most of the turkey bacon (reserve some for topping).
  4. Gently stir until well combined. Chill for at least 30 minutes before serving for optimal flavor.
