  • 2.5 lbs lamb neck slices
  • 2 tablespoons olive oil
  • 1 onion, finely sliced
  • 6 garlic cloves, smashed
  • 1 preserved lemon, quartered
  • 3/4 cup green olives, pitted
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground cinnamon
  • 2 bay leaves
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup dry white wine or water
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Sear the lamb neck slices in olive oil until browned. Remove from pot.
  2. Sauté onions and garlic in the same pot until softened; add preserved lemon.
  3. Mix in spices and return lamb to the pot with olives.
  4. Deglaze with white wine or water; cover and braise on low heat for 2-3 hours.
  5. Let rest before serving; garnish with fresh parsley.
