Ingredients
- 1 lb chicken breast (diced)
- 1 tbsp fresh ginger (grated)
- Zest and juice of 1 lemon
- 2 tbsp honey
- 1 tbsp soy sauce
- 1 cup coconut milk
- 1 cup jasmine or basmati rice
- 1/2 cup diced pineapple
- 1/2 cup diced mango
- 1/4 cup diced red onion
- 1 tbsp lime juice
- Salt & pepper to taste
- 1/4 cup mayonnaise
- 1–2 tsp sriracha
- 1 tsp lime juice for mayo
- 1 tbsp olive oil
- 1/2 cup water
- 1/2 tsp salt
Instructions
- Rinse the rice under cold water until clear. In a medium saucepan, combine rice, coconut milk, water, and salt. Bring to a boil, then reduce heat and simmer for 15 minutes. Let it sit covered for another 5 minutes.
- In a bowl, whisk together ginger, lemon zest, lemon juice, honey, and soy sauce for the glaze.
- Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper; cook until golden brown. Pour the glaze over the chicken and stir until thickened.
- For the salsa, mix diced pineapple, mango, red onion, lime juice, salt, and pepper in a bowl.
