  • Zest and juice of 1 lemon
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 cup coconut milk
  • 1 cup jasmine or basmati rice
  • 1/2 cup diced pineapple
  • 1/2 cup diced mango
  • 1/4 cup diced red onion
  • 1 tbsp lime juice
  • Salt & pepper to taste
  • 1/4 cup mayonnaise
  • 12 tsp sriracha
  • 1 tsp lime juice for mayo
  • 1 tbsp olive oil
  • 1/2 cup water
  • 1/2 tsp salt

Instructions

  1. Rinse the rice under cold water until clear. In a medium saucepan, combine rice, coconut milk, water, and salt. Bring to a boil, then reduce heat and simmer for 15 minutes. Let it sit covered for another 5 minutes.
  2. In a bowl, whisk together ginger, lemon zest, lemon juice, honey, and soy sauce for the glaze.
  3. Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper; cook until golden brown. Pour the glaze over the chicken and stir until thickened.
  4. For the salsa, mix diced pineapple, mango, red onion, lime juice, salt, and pepper in a bowl.
  5. For spicy mayo, whisk mayonnaise with sriracha and lime juice; adjust to taste.
  6. Serve coconut rice topped with chicken and salsa; drizzle with spicy mayo.
