Ingredients
- 3 ½ – 4 lb beef shoulder
- ½ lb turkey bacon
- 1 large onion
- 2 cloves garlic
- 3 cups chicken broth
- 1 cup prunes
- 2 apples
- 2 tbsp olive oil
- 2 tbsp grainy mustard
- 1 tbsp Dijon mustard
- 2–3 sprigs fresh thyme
- 2 tbsp cornstarch
- kosher salt (as needed)

Instructions
- Trim and cut beef into 2-inch chunks; pat dry. Cut turkey bacon into strips.
- Heat olive oil in a large braiser over medium-high heat. Brown the beef in batches until golden.
- Sauté turkey bacon until crispy; remove and set aside.
- In the same pot, sauté diced onion for 3-4 minutes, add minced garlic, and deglaze with apple juice.
- Stir in mustards and thyme; return browned beef and pour in chicken broth.
- Cover and simmer on low for one hour.
- Add prunes and turkey bacon; simmer for another 15 minutes.
- Incorporate quartered apple slices until tender. Thicken with cornstarch slurry.
