- 1 lb beef stew meat, cubed
- 2 tbsp olive oil

- 3 medium carrots, sliced
- 2 medium potatoes, cubed
- 4 cups beef broth
- 1 cup red wine (optional)
- 1 bay leaf
- 1 tsp dried thyme
- 1 tbsp Worcestershire sauce
- Crusty bread loaves for bowls
Instructions
- Heat olive oil in a large pot over medium-high heat. Sear the cubed beef until browned on all sides (5-7 minutes).
- Add diced onion and minced garlic; cook until the onion is translucent (3-4 minutes).
- Stir in sliced carrots and cubed potatoes.
- Pour in beef broth and optional red wine; add bay leaf, thyme, and Worcestershire sauce. Stir to combine.
- Bring to a boil, then reduce heat and let simmer uncovered for about 1.5 to 2 hours until beef is tender.
- While simmering, hollow out round loaves of bread for bowls.
- Remove bay leaf before serving stew in the prepared bread bowls.
