  • 1 lb beef stew meat, cubed
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 medium potatoes, cubed
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1 tbsp Worcestershire sauce
  • Crusty bread loaves for bowls

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear the cubed beef until browned on all sides (5-7 minutes).
  2. Add diced onion and minced garlic; cook until the onion is translucent (3-4 minutes).
  3. Stir in sliced carrots and cubed potatoes.
  4. Pour in beef broth and optional red wine; add bay leaf, thyme, and Worcestershire sauce. Stir to combine.
  5. Bring to a boil, then reduce heat and let simmer uncovered for about 1.5 to 2 hours until beef is tender.
  6. While simmering, hollow out round loaves of bread for bowls.
  7. Remove bay leaf before serving stew in the prepared bread bowls.
