  • 2 cups cooked jasmine rice
  • 1 lb boneless, skinless chicken breast
  • 3 cloves garlic
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1/4 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • 1 tbsp soy sauce
  • 1 tsp sesame oil

Instructions

  1. Make the bang bang sauce by mixing mayonnaise, sweet chili sauce, sriracha, and soy sauce in a small bowl. Set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Cook diced chicken until browned (5-7 minutes). Remove and set aside.
  3. In the same skillet, sauté minced garlic for 30 seconds until fragrant.
  4. Add mixed vegetables; cook for 2-3 minutes until tender.
  5. Stir in cooled jasmine rice and fry for another 2-3 minutes until heated through.
  6. Return chicken to the skillet, pour in bang bang sauce, and mix well.
  7. Drizzle with sesame oil and toss everything together before serving.
