Ingredients

Scale
  • 1½ cups graham cracker crumbs
  • ¼ cup granulated sugar (optional)
  • 6 tbsp unsalted butter, melted
  • 2 ripe bananas, mashed
  • 24 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 3 large eggs
  • ½ cup sour cream or Greek yogurt
  • 1 tsp vanilla extract
  • Optional toppings: fresh banana slices, whipped cream, caramel drizzle

Instructions

  1. Preheat your oven to 325°F (163°C). In a bowl, mix graham cracker crumbs with optional sugar and melted butter until combined. Press into the bottom of a springform pan and bake for 8–10 minutes. Let cool.
  2. In another bowl, beat softened cream cheese until smooth. Gradually add in sugar and eggs one at a time until well mixed. Stir in sour cream or yogurt, vanilla extract, and mashed bananas. If desired, mix in flour for stability.
  3. Pour filling over crust and place the pan inside a larger baking dish filled with water (water bath). Bake for 60–70 minutes until edges are set but center remains slightly jiggly. Let cool in the oven with the door cracked open for one hour.
  4. Chill in the refrigerator for at least 4 hours or overnight before serving.
  5. Top with whipped cream and fresh banana slices just before serving.
