  • 3 oz dark chocolate bar (chopped)

Instructions

  1. Whisk together all-purpose flour, cake flour, baking powder, baking soda, salt, and cornstarch in a bowl; set aside.
  2. In a stand mixer, beat unsalted butter with granulated and brown sugars until light and fluffy.
  3. Mix in the egg, egg yolk, and vanilla until smooth.
  4. Gradually add dry ingredients on low speed until combined.
  5. Carefully fold in semi-sweet chips, milk chocolate chips, and chopped dark chocolate.
  6. Chill dough for at least 1 hour or up to 24 hours for best results.
  7. Preheat oven to 350°F (177°C) and line baking sheets with parchment paper.
  8. Scoop large dough balls onto sheets spaced about three inches apart.
  9. Bake for 15-18 minutes until edges are set but centers look slightly underbaked.
