  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Boil the eggs in water for 7 minutes for jammy yolks. Cool in ice water before peeling.
  2. Toss diced sweet potatoes with olive oil, salt, and pepper; roast at 400°F (200°C) for 20-25 minutes.
  3. Sauté spinach in a nonstick pan over medium heat until wilted (about 2 minutes).
  4. Assemble your plate: start with spinach, add roasted sweet potatoes and sliced avocado, then top with jammy eggs.
  5. Finish with pickled jalapeños and season as desired.
