Ingredients
- 2 hard- or medium-boiled eggs
- 1 ripe avocado, sliced
- 1 medium sweet potato, peeled and cubed
- 1 tsp olive oil
- Salt and freshly cracked black pepper to taste
- 2 tablespoons fresh parsley, finely chopped (for garnish)
Instructions
- Preheat the oven to 200C (400F). Toss the cubed sweet potato with olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for 20-25 minutes until golden and tender.
- In a pot of boiling water, gently add the eggs. Cook for 8-9 minutes for firm yolks or 7 minutes for slightly jammy centers. Cool in cold water before peeling and slicing.
- While potatoes are roasting and eggs are boiling, slice the avocado and lightly season with salt.
- Assemble your bowl by layering roasted sweet potatoes, sliced eggs, and seasoned avocado. Top with extra black pepper before serving.
