  • 1 lb dried pinto beans
  • 4 cups chicken stock
  • 1 bottle beef broth
  • 6 slices turkey bacon
  • 1 medium onion, chopped
  • 2 jalapeno peppers, finely chopped
  • 3 cloves garlic, minced
  • Optional: cilantro, tomatoes, cumin, oregano

Instructions

  1. Soak the pinto beans overnight in plenty of water.
  2. Drain the beans and add them to a large pot with chicken stock, beef broth, and salt beef (or chicken bone). Simmer for 1½ hours.
  3. In a skillet, cook turkey bacon until crispy; set aside. Sauté onions, jalapenos, and garlic in the remaining grease until soft.
  4. Stir the sautéed vegetables and turkey bacon into the pot with beans. Add optional ingredients like cilantro and spices.
  5. Continue simmering for another 1½ hours until the beans are tender.
