  • 3 boneless skinless chicken breasts (about 1 ½ pounds)
  • 16 ounces potato gnocchi
  • ½ cup Asiago cheese, grated
  • 2 cups chicken broth
  • 5 tablespoons unsalted butter
  • 2 cups fresh baby spinach
  • 1 medium shallot, diced
  • 1 teaspoon garlic, minced

Instructions

  1. Season chicken breasts with salt and pepper. Cook in a non-stick skillet with butter until golden and cooked through (165°F). Remove and keep warm.
  2. In the same skillet, melt remaining butter and sauté shallots and garlic until soft. Whisk in flour until golden.
  3. Gradually add chicken broth while whisking; cook until thickened.
  4. Stir in half-and-half and uncooked gnocchi; cook until tender (5-7 minutes).
  5. Mix in spinach and grated Asiago cheese until melted.
  6. Serve topped with sliced chicken and garnish with parsley.
