  • 2 lb boneless skinless chicken thighs
  • 6 garlic cloves, thinly sliced
  • 1 piece ginger (3 inches), peeled and finely chopped
  • 1 bundle scallions (6 to 8 oz), thinly sliced (divided)
  • 4 tsp kosher salt
  • Freshly ground black or white pepper, to taste
  • 10 cups water
  • 8 oz dried ramen or curly noodles
  • 1 cup carrot, cut into thin matchsticks
  • 1/4 cup black rice vinegar
  • 1/4 cup soy sauce
  • 2 tbsp toasted sesame oil
  • Crispy chili oil, to taste

Instructions

  1. In a large pot, bring water to a boil. Add chicken thighs and cook for about 15 minutes until fully cooked. Remove chicken and set aside.
  2. In the same pot, add oil if needed and sauté garlic, ginger, and white parts of scallions for about 2-3 minutes until fragrant.
  3. Return chicken to pot with aromatics. Pour in black rice vinegar and soy sauce; season with salt and pepper.
  4. Bring broth back to a boil; add noodles and matchstick carrots. Cook until noodles are tender, about 5-7 minutes.
  5. Serve hot in bowls garnished with scallion greens and crispy chili oil.
