  • ½ cup unsalted butter, at room temperature
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 medium apple, peeled and finely chopped
  • ¼ cup granulated sugar (for rolling)
  • 1 teaspoon ground cinnamon (for rolling)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cream of tartar, cinnamon, and salt.
  3. In another bowl, cream butter with granulated and brown sugars until fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually mix in dry ingredients until just combined; fold in chopped apples.
  6. Roll tablespoon-sized portions into balls; coat in cinnamon-sugar mixture.
  7. Place on prepared baking sheet, spacing them 2 inches apart.
  8. Bake for 8–10 minutes until edges are golden; let cool before serving.
