  • 2 large apples (cored and sliced into rings)
  • 1 tablespoon cinnamon
  • 1 tablespoon sugar
  • 4 slices of cheese (cheddar or any preferred type)
  • 4 tablespoons peanut butter (or any nut butter)
  • Optional garnish: 2 tablespoons fresh parsley (finely chopped)

Instructions

  1. Slice apples into ½ inch thick rings and remove the core. Mix cinnamon and sugar in a bowl, then coat both sides of each apple ring.
  2. Heat a skillet or griddle over medium heat with a small amount of butter or oil.
  3. Cook apple rings for 2-3 minutes on each side until slightly softened and caramelized.
  4. Assemble the sandwiches by spreading peanut butter on one side of two cooked apple rings, adding cheese in between before topping with another apple ring.
  5. Return the assembled sandwich to the skillet and cook for another minute on each side until the cheese melts slightly.
  6. Remove from heat, sprinkle with parsley, and serve warm.
