Instructions
- Slice apples into ½ inch thick rings and remove the core. Mix cinnamon and sugar in a bowl, then coat both sides of each apple ring.
- Heat a skillet or griddle over medium heat with a small amount of butter or oil.
- Cook apple rings for 2-3 minutes on each side until slightly softened and caramelized.
- Assemble the sandwiches by spreading peanut butter on one side of two cooked apple rings, adding cheese in between before topping with another apple ring.
- Return the assembled sandwich to the skillet and cook for another minute on each side until the cheese melts slightly.
