  • ½ cup + 1 tablespoon all-purpose flour (for muffins)
  • ¼ teaspoon baking soda
  • ⅛ teaspoon salt
  • ¾ teaspoon pumpkin pie spice

Instructions

  1. Preheat oven to 350°F (175°C) and grease or line a muffin tin.
  2. In a bowl, mix flour, cold butter, sugars, salt, and cinnamon to create the streusel; add diced apples and set aside.
  3. Whisk together dry ingredients: flour, baking soda, salt, and pumpkin pie spice in another bowl.
  4. In a separate bowl, combine sour cream, pumpkin, juices, sugars, egg yolk, and vanilla until smooth.
  5. Gradually fold dry ingredients into wet ingredients until just combined; gently mix in diced apples.
  6. Fill each muffin cup two-thirds full with batter and top with streusel.
  7. Bake for about 18 minutes or until a toothpick comes out clean.
