  • 2 kg Fuji, Royal Gala, or Pink Lady apples
  • 150 g granulated sugar (divided)
  • 1 tsp salt
  • 600 ml milk (whole, skimmed, lactose-free, or plant-based)
  • 4 egg yolks
  • 2 tsp vanilla bean paste
  • 2 tbsp cornstarch

Instructions

  1. Preheat your oven to 180°C (350°F). Peel and slice the apples, combining them with 150 g of sugar and 1 tsp of salt in a bowl. Let sit for 10 minutes.
  2. Spread the apple mixture on a lined baking tray and bake for about 30 minutes until tender yet firm. Set aside.
  3. In a saucepan over medium heat, mix the remaining sugar, cornstarch, and salt with milk while whisking continuously until thickened.
  4. In another bowl, whisk together egg yolks and gradually incorporate half of the warm milk mixture before returning it all to the saucepan. Cook until further thickened.
  5. Stir in vanilla bean paste and cool slightly before assembling by layering apples and custard in serving molds.
  6. Chill for at least two hours before serving.
