Ingredients
- 2 kg Fuji, Royal Gala, or Pink Lady apples
- 150 g granulated sugar (divided)
- 1 tsp salt
- 600 ml milk (whole, skimmed, lactose-free, or plant-based)
- 4 egg yolks
- 2 tsp vanilla bean paste
- 2 tbsp cornstarch
Instructions
- Preheat your oven to 180°C (350°F). Peel and slice the apples, combining them with 150 g of sugar and 1 tsp of salt in a bowl. Let sit for 10 minutes.
- Spread the apple mixture on a lined baking tray and bake for about 30 minutes until tender yet firm. Set aside.
- In a saucepan over medium heat, mix the remaining sugar, cornstarch, and salt with milk while whisking continuously until thickened.
- In another bowl, whisk together egg yolks and gradually incorporate half of the warm milk mixture before returning it all to the saucepan. Cook until further thickened.
- Stir in vanilla bean paste and cool slightly before assembling by layering apples and custard in serving molds.
