  • 3 large eggs
  • 175 g self-raising flour
  • 1/2 tsp cinnamon (for cupcakes)
  • 1/4 tsp mixed spice (for cupcakes)
  • 175 g unsalted butter (softened, for buttercream)
  • 350 g icing sugar
  • 1 1/2 tsp cinnamon (for buttercream)
  • 23 tbsp milk

Instructions

  1. Prepare the apple filling by cooking chopped apples with sugar and spices until soft; let cool.
  2. Make the crumble topping by mixing flour, sugar, and cinnamon with butter; bake until golden.
  3. For the cupcakes, cream softened butter and sugar, add eggs one at a time, then fold in flour and spices.
