  • 1 cup apple cider (reduced)
  • For the Filling: ½ cup whole milk
  • ½ cup unsalted butter
  • 3 cups powdered sugar
  • ¼ cup reduced apple cider
  • 1 tsp vanilla extract
  • Pinch of salt
  • ½ cup store-bought caramel sauce or homemade

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon.
  3. In another bowl, cream together butter and brown sugar until fluffy. Add egg and vanilla; mix well.
  4. Gradually incorporate dry ingredients and reduced apple cider into wet mixture until just combined.
  5. Scoop tablespoon-sized portions onto prepared sheets; bake for about 10 minutes until edges are golden.
  6. Cool cookies before filling them with caramel mixture made from butter, powdered sugar, milk, reduced apple cider, and vanilla.
