  • 1 cup rolled oats
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 2 tablespoons nut milk
  • 1 teaspoon vanilla
  • 1/8 teaspoon sea salt
  • 3 cups blackberries
  • 1/4 cup unsweetened shredded coconut
  • 1 tablespoon corn starch
  • 1/8 teaspoon sea salt
  • 1/4 cup honey
  • 3/4 cup water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, rolled oats, melted coconut oil, maple syrup, nut milk, vanilla, and sea salt. Mix until crumbly.
  3. Press 7 cups of the mixture into an 8-inch springform pan to form the crust.
  4. Bake the crust for about 10 minutes until lightly golden.
  5. In a saucepan, mix blackberries, shredded coconut, corn starch, sea salt, honey, and water. Cook over medium heat until blackberries soften (10-15 minutes).
  6. Pour the blackberry filling into the pre-baked crust and top with reserved crumble mixture.
  7. Bake for another 10 minutes until heated through.
  8. Allow cooling for at least 20 minutes before slicing.
