  • 1 1/2 cups sweetened shredded coconut
  • 1 1/2 cups sliced almonds
  • 8 cups crispy rice cereal
  • 8 cups mini vegan marshmallows
  • 4 tablespoons butter
  • 1 teaspoon pure coconut extract
  • 8 oz semi-sweet or bittersweet chocolate

Instructions

  1. Preheat the oven to 375°F. Spread shredded coconut and sliced almonds on a baking sheet and bake for 6-10 minutes until lightly golden.
  2. Grease a 9"x13" cake pan with butter and set aside two greased rubber spatulas. In a large bowl, combine crispy rice cereal with most of the toasted coconut-almond mixture (reserve some for topping).
  3. In a microwave-safe bowl, melt mini vegan marshmallows with butter in the microwave until puffy (2-3 minutes). Stir in pure coconut extract.
  4. Quickly combine the melted marshmallow mixture with the cereal mixture until well-coated.
  5. Press the mixture into the prepared pan evenly. Melt chocolate and pour over the top; spread it evenly and sprinkle with reserved coconut-almond mix.
  6. Allow to cool completely before cutting into squares.
